Cheesecake- English version for a very special friend.
Ingredient:
- 60g, Graham
- 20g,Butter
- 300g,cream cheese, cut into cubs and bring to room temperature
- 60g,sour cream
- 105g,sugar
- 5g,All purpose flour
- 2pcs,egg, whole
- 2pcs,egg yolk
- few drops,vanilla extract
Prepare a 7 inch Cheesecake Pan Removable Bottom and lined with foil. Shown as photo.
Steps:
1)Crust: Combine ground graham and butter. Press into a ring mold.
2)Using a mixer, cream the cheese till smooth.
# Make sure cream cheese is at room temp before working on it.
#Use low to medium speed for mixing through out the whole process, not high speed.
3)Add in sour cream. mix for few second.
4)Add in sugar gradually, mix till smooth.
5)Add in flour.Mix till everything blend well.
6)Add in eggs and egg yolk, one at a time, beating well after each addition.
7)Scrap side of the mixing bowl once in a while to ensure all the ingredients blend well.
8)Add in Vanilla extract and hand mix with spatula.
9)Pour the batter over crust. Bake at 150c for 30-45 minutes using a bain-marie/water bath method.
Bain-marie/water bath:
Prepare a rectangle mold, pour hot water over till 1/2 or 2/3 of the height.
Place a wet rag inside.
Place the cheesecake ring mold in the center and bring to bake.
10)Remove from oven and cool completely then chill at least 4 hour before serving.
